Care for Your Copper Pot

Copper pots are best used over an open flame and are not suitable for induction cooktops. Copper is an excellent conductor of heat—more than ten times better than stainless steel. Even on low heat, the entire pot warms evenly, gently enveloping your ingredients. This makes it especially good for simmering dishes, as food is less likely to scorch and flavors develop beautifully.

Because copper reacts easily with acids and salt, the interior is lined with tin. Please avoid heating the pot when empty, as tin has a low melting point. The tin lining is also soft and delicate, so it’s best not to use metal spatulas or abrasive scrubbers. If the tin lining ever wears down, we are happy to re-tin your pot. Contact us for service—the sooner it is done, the cleaner and more beautiful the result will be. Please do not store cooked food in the pot for long periods. After each use, wash and dry thoroughly, then store in a dry place. The exterior can be polished to a bright shine, though copper naturally changes over time. Left unpolished, it will develop a rich patina and darken, much like an old penny. In some cases, a greenish layer (verdigris) may appear; this is harmless and part of copper’s natural character.
